Hodo

The Journey of a Soybean

It started simple — we reached out to buy tofu from Hodo. Then we visited their factory, and everything changed.

Hodo wasn't just a supplier. They were a teacher — sharing the craft behind every batch of quality soy milk, straight from the source.

That knowledge became the seed for something new: our chef's own take on Tofu Custard. 🍮✨

Because real partnership was never just business.
It's an exchange of knowledge, craft, and inspiration.

From a single soybean, to the plate in front of you.

Liberty Ducks

In Thai cuisine, duck is considered a dish influenced by Chinese cooking. That's why choosing high-quality duck is just as important as finding ways to reduce the gamey odor that many people dislike. Payakk chooses duck from Liberty Duck, because raising the ducks with proper care directly affects their hormones — and, in turn, the smell of the meat. The rest comes down to technique, as our chef blends methods from Thai cuisine with Pastry to bring it all together.

Stemple Creek Ranch

We've received a great deal of guidance from Stemple Creek Ranch Farm, as a trusted partner caring for the beef used at Payakk. Our confidence in the quality of this beef isn't based only on the meat that arrives in the Chef's hands — we've seen firsthand the entire care process, including the feed the cattle are raised on. This gives us even greater confidence that every dish of meat served at Payakk has been cared for from the source, in the best way possible.

Design of Payakk

"Karan" — a character you can see, but never hear.
It’s the heart of the visual concept behind PAYAKK’s latest design.
This interpretation was brought to life in a contemporary way by the 100% Thai graphic design team, AND ON.

AND ON is a team whose work has not only caught attention but also won multiple awards in the field of branding design.

For nearly two months,
PAYAKK and AND ON collaborated across countries and time zones.
Yet, what connected us was a shared fascination with “Karan” —
a quiet yet complete symbol, rich in hidden meaning.

Just like PAYAKK, quietly nestled in the forest,
we spend our time thinking, searching, sourcing, and waiting for the perfect moment.
Because every dish we serve is made with deep intention.
We let the silence speak —
and allow the food to tell our story.

That is the true meaning behind:
The Roaring of Thai Supper Club

And that is why “Karan” is more than just a symbol.
It represents the wholeness of language — even when it makes no sound.

This design was led by Keng from AND ON,
who interpreted PAYAKK through a designer’s eyes,
and gave new life to the concept of “Karan” through visual storytelling.

TLE…The Carpenter

Many who visit PAYAKK often find their eyes drawn to the striking wooden bar counter that stands proudly at the heart of our space.
This beautiful piece was crafted by a Thai artisan who originally came from the northeast region of Thailand.

Tle, a graduate from the Faculty of Architecture at Khon Kaen University, moved here to begin a new chapter in both life and work.
With roots in a family of traditional carpenters, he brings not only technical skill but also a deep respect for the craft — combining architectural knowledge with generations of woodworking expertise.

What you see is more than just a bar.
It’s a piece that tells a story — of heritage, craftsmanship, and the quiet passion of one Thai artisan who poured his heart into every detail.

Today, we are honored to receive the torch. Jessica Lasky Catering has officially passed on Little Kitchen, a space they lovingly cultivated, into our hands. From now on, it will continue its journey as Payakk.

We are deeply grateful and committed to caring for this space with the same love and dedication they poured into it.
